Hello again,
I hope you are ready for an extra delicious cocktail “ you will understand” , this is a very special cocktail for me too.   I created it for my girlfriend back in the day.  Every time we used to argue she used to tell me “ when you will grow up- you will understand”  Basically the cocktail is inspired by the concept of love, I wanted it to contain special ingredients and encompass all flavors; so it’s a spicy, sweet-sour cocktail with salted rim a slightly bitter finnish.  Ironically, she never got the chance to taste it;  too bad.

The key is a special syrup, to make this special syrup you will need:

  • Saffron strings
  • Poppy seeds
  • Vanilla pod
  • Tabasco habanero
  • Cinnamon sticks
In a small sauce pan combine 7 oz of white sugar with 7 oz of water.
Add about 12 saffron strings, 4 spoons of poppy seeds, and 2 cinnamon sticks.
Split the vanilla pod and add to the sauce pan.
Add Tabasco havanero to taste, you can always add another drop or two when making the cocktail.
Simmer on low heat until sugar is dissolved and leave it on low it for more 30 minutes stirring and using the back of the spoon to crack the poppy seeds.
Let cool over night and strain, bottle and keep in the fridge.
After making this awesome syrup we can make the cocktail.

You will need:

  • Smirnoff green apple
  • Passion fruit or Passion fruit puree if you can get fresh
  • Campari
  • Atlantic salt
  • Egg white
  • Lemon juice ( freshly squeezed will be best)
  • the syrup of course

First we prepare the glass- a martini glass.
The grains of the Atlantic salt are pretty big, so we need to crush them a little with a muddler first.
Use a lemon wedge to wet half the rim and coat it with the atlantic salt.
Add a generous  dash of Campari to the glass.

In a shaker combine:

  • 2 oz Smirnoff green apple
  • 1 oz of passion fruit
  • 0.75 oz lemon juice
  • 0.5 oz the syrup
  • Small egg white
  • If you want you can add a drop or two of the Tabasco habanero- recommended

Dry shake, add ice and shake again.
Strain gently on the side of the glass to create the layering.

Now you can stir it with the Campari or let it sneak as you sip the cocktail
Drink from the salted rim side or not, it’s up to you.
