Field of Beets

Dear fellow drinkers,
I hoped you liked the “Halvalahlla”.I really don’t know what happened but these two weeks just flew by.
So to enjoy ourselves this weekend we will make the “Field of Beets” cocktail

When I was on vacation in Tel-Aviv about a month ago,  I met one of my mentors in Mixology, a dear friend, Ariel Liezgold.  Ariel  happens to own a great cocktail bar, the 223 on Dizengoff st. Tel-Aviv.We came up with some really nice cocktails together and today I will share with you one of our great creations.  It looks great and tastes amazing,

To make it you will need:

  • Gin
  • Lychee  liquor
  • Aperol
  • Lemon
  • Beets
  • Egg white
  • Cherry bitters
  • Dill

Preparations and making of the cocktail

Beets Syrup:

METHOD 1  (Juicer)

If you have a juicer

Take 2 medium beets, cut the heads and peel and juice them, they surprisingly contain a lot of juice.

Check the amount of juice you have and measure 1.5 of that amount sugar ( for example:  if you got 2 oz. of beets juice use 3 oz. of sugar)

In a small saucepan combine the juice with the sugar.

And simmer until dissolve, fine strain, let cool and bottle.

METHOD 2 (Store Bought)

If you don’t have a juicer you can buy beet juice at any grocery store.

METHOD 3 (Simmering) 

Take  2 medium beets, cut the heads and peel, cut them to cubes, put them in a bowl and cover with water( for every beet around a 1 cup of water) let sit overnight night,

Move the beets with the water to a small sauce pan and add 1.5 cups of sugar for every cup of water, simmer until sugar is dissolved and the syrup is infused with the beets flavor and color, fine strain, let cool and bottle.

And now to the easy part:

Goes in the shaker:

*we use ml as units, don’t worry I got it for you. 1 oz. is about 30 ml, so using a 1 oz. jigger and some sense it shouldn’t be that difficult.

  • *30 ml ( 1 oz) of gin
  • *20 ml (0.7 oz) Bols lychee ( try to use bols- if you can’t find it use other)
  • *20 ml freshly squeezed lemon juice
  • *20 ml of beets syrup
  • *20 ml egg white ( if you find it hard to measure just use an egg white from a small egg)
  • *10 ml of Aperol
  • * 2 drops of Fee brothers cherry bitters

First dry shake it without ice, then add ice and shake again until very cold
Strain to a coupe glass
Garnish with a lightly smacked dill

If you make it, they will come
