Jack Daniel’s Honey Ice Cream

Jack Daniel’s Honey Whiskey came to market recently and the first thought in my head was…Ice Cream!



In a saucepan over medium heat, add the following (measurements are estimated):

1 can of evaporated milk

1/2  cup of Jack Daniels Honey whiskey

1/2 cup of whole milk

a big squirt of honey (2-3 tablespons)

Split a vanilla bean down the middle with a sharp knife and scrape out the seeds.

Add the vanilla bean, seeds and all, into the saucepan.  Bring the liquid to a quick boil to remove some of the alcohol (to help it freeze better).  Keep stirring with a whisk.  Take it off the heat if the mixture starts to rise, as milk tends to do.

Strain into a bowl

Put the bowl into a larger bowl of ice water to cool it down.  You could also put it into the fridge.  Me, I was impatient so when it was cool enough I put the bowl in the freezer.  Important – the mixture has to be cold… not cool, cold.  Otherwise you’ll be waiting all night for the ice cream to set up.  Since the mix contains alcohol, it’s going to take a long time for it to set so help yourself out and chill the mix thoroughly.

Add the mix to the ice cream maker, flip the switch, and move on to the sauce… this is gonna be good.

In a pan add a cup of dark brown sugar and 1/2 stick of butter (non salted.. if you’re a guy it’s easy mistake to make).  Over medium heat, keep stirring.   Keep stirring.  Did I mention keep stirring?  Keep stirring so the melted butter mix with the melting sugar.  If you don’t keep the sugar moving, it’ll burn and that’s one headache no one needs.

Add sliced ripe bananas.  The more ripe, the better.  The heat will bring out the sugar in the bananas.  I know what you’re thinking… Bananas Foster with whiskey instead of rum…yes, you’re right it is.

Did I mention to keep stirring? Turning the heat low helps too, you really don’t want the caramel to burn.

Add about 1/2 cup of Jack Daniels Honey whiskey.  Keep mixing and covering the sliced bananas.  Keep it going until the sauce reduces and gets syrupy.

Oh yeah.

Now is the good part.  Take a slice of banana bread and add a scoop of ice cream (not so fast, it took about an hour for it to setup)

Add the bananas and sauce and enjoy.  I would end this with a delightful epilogue  but the pic says it all.  I will say this though, if you’re a calorie counter, at least you can enjoy the picture.

***A word of warning, as you know, this ice cream contains alcohol.  Even after cooking the mix, there was still a lot left.  It has a bite and will knock you if you eat enough of it… I’m speaking from first hand experience.
