Ladies and Gentlemen,
Allow me to represent Strawbeeries, and no this is not a typo.
Again yours truly joined forces with Ariel Leizgold from the
223 in Tel-Aviv,
you already met him on “field of beets”. This time we made you some wheat-beer syrup to play with.

To make some Strawbeeries you will need:
- Gin
- Wheat beer
- White sugar
- Monin Strawberry puree (or fresh)
- Lemon juice
- Absolut Peppar
- Mint
- Basil
- Sparkling water
Let’s get to work
To make wheat beer syrup we will work in a clod process method and put 1.5:1 ratio between sugar and beer; for every oz of wheat-beer we will put 1.5 oz of white sugar, and stir until all sugar is dissolved, then let it rest for a little while and strain from froth, bottle and keep cool. ( this is a very sensitive syrup, keep it in the fridge- and make small amounts)
About the strawberry puree- if you can’t get one, you can make one by blending fresh strawberries with sugar ( amount of sugar depends on sweetness of the fruit)
After you got it, take a highball glass and fill it with ice.
In a shaker combine;
*we use ml as units, don’t worry I got it for you. 1 oz. is about 30 ml, so using a 1 oz. jigger and some sense it shouldn’t be that difficult.
- 30 ml ( 1 oz.) gin
- 15 ml (0.5 oz.) wheat-beer syrup
- 10 ml ( 0.3 oz.) strawberry puree
- 20 ml lemon juice
- Dash of Absolut Peppar
Shake until cold, strain over ice
Lightly smack one basil and one mint leaves and use as garnish.

The aromas from the leaves compliment the aromas of the cocktail to create one amazing drink.
See you in two weeks,
Le’Chaim
